Almond butter, maca, banana, dates, and cacao nibs. In ice cream form. Yeahhhhhh this is happening. Thanks to soon-to-be-open Moberi Bowls, a new concept from Moberi, for sharing this recipe! Moberi Bowls is opening THIS WEEKEND in Portland, Oregon and features acai bowls (previous coverage here) and – get this – vegan, paleo-friendly superfood sundaes. Allllllll the yes.
These sundaes are genius. The bases are vegan, paleo-friendly, refined sugar free and made with all clean ingredients (things like nut butters, coconut oil, frozen fruit, etc). They’re blended to an ice cream-like consistency and topped with superfoods. I got a sneak peak at the menu and seriously omgggg. Safe to say I love everything about this.
I cannot wait to get my paws on one of these sundaes in person!! Until then….
Moberi’s Almond Butter Maca Superfood Sundae
- 6oz almond milk
- 1.5 frozen bananas, frozen in chunks
- 2 tbsp almond butter
- 2 medjool dates
- 1 tsp maca powder
- 1/2 cup ice
- 1 – 2 tbsp cacao nibs
- Combine all ingredients except cacao nibs in a blender (Vitamix or food processor works best) until you get an ice cream-like consistency
- Spoon into a bowl and top with cacao nibs
