If you’re in the mood to have an epic dinner party, this build-your-own-earth-bowl extravaganza is for you. This past weekend the squad got together, at long last, for one of the best meals of all time. In the words of Katie, “we’re talking mouths quiet, no-words-for-this kind of deliciousness.” We each brought different “earth bowl” ingredients (things like quinoa, roasted veggies, sauces, etc.) and put together the bowls just before we sat down to eat. You guys this is so fun and easy and awesome and you should seriously all have this same party (and invite us!! kthanks). ♥♥♥

Ingredient guide and how to split it up (potluck style)
Each person volunteers to bring the ingredients listed on one of the lines below ↓ We all met at Claire’s house (hi hi – thank you wonderful host!) with our ingredients plus some bonus items. We set out a buffet of awesomeness, started with a base of greens and quinoa, and then added everything else from there. Omg the pesto. The chimichurri. The beets. ALL OF IT.

Susel (@xoxo_susel on instagram) brought the quinoa in a rice cooker #magic. We used the lemons as a squeeze dressing.
I volunteered for this category. Hiiii. I picked up hummus from Trader Joe’s and used my favorite fancy-up-the-hummus trick of serving it in a bowl with olive oil and black sesame seeds. I wanted to impress everyone, obvi ;).
Claire (@clairetiu_mn) shared greens and radishes from her CSA that were SO GOOD. Oh! And pea pods that were insane. She also whipped up a chimichurri recipe from paleomg that she said was super easy. I cannot wait to try making this.
Roasted beets + sweet potatoes
Katie (@fittoflourish) brought these and 3 large sweet potatoes and 3 large beets was the perfect amount for this size group. She cut them into pieces (see close up of my bowl below) and roasted the sweet potatoes with garlic and rosemary. I wish I was eating some of the beets as I write this.
Pesto + avocados
Katy (@hiitmeuptiu) made a bomb ass vegan pesto using basil, pine nuts, and nutritional yeast (center pesto in the overhead pic with the dips) and alllll the yes to this. It was next level as per ushe with Katy’s amazing creations. She also brought three perfectly ripe avocados. I can’t even get into the dessert she surprised us with….that is a story for another time.
Roasted cauliflower and chocolate
Laura (@lauraq_tiu) is a wizard. Claire and I actually snuck away to the kitchen after dinner to sample another bite of Laura’s purple roasted cauliflower that she roasted with a magical combination of spices including cinnamon, turmeric, etc. Consult Laura for the this recipe that she invented. She also made up a recipe for brought a spring pea/kale/mint pesto that was super fresh and amazing and I want to eat it by the ton. Last but not least…the almond butter filled chocolate that had a secret poem inside the label that seemed to be a little love poem about almond butter (so awesome and weird). ♥♥♥
